Oreo Cupcakes

I found a recipe a while ago for Oreo cupcakes and, thinking it looked interesting, I cut it out of a magazine and stuck it in my scrapbook, only to forget about it.And so, when I came across it the other day, I decided it would be fun to try making them. I made a few alterations to the recipe but, judging by the comments from my friends who tried them, they were awesome, and the alterations were fine.

For the cupcakes:

40g butter

140g sugar

1 1/2 tbsp baking powder

30g cocoa powder

90g self-raising flour

1 egg

120ml milk

6 Oreos, halved

For the buttercream:

30g butter

30g icing sugar

30g cocoa powder

3 Oreos, crushed

To decorate:

6 Oreos, halved

  1. Prepare a cupcake tin with 12 cupcake cases, or use a silicon mould.
  2. Heat the oven to 180c.
  3. Soften the butter; cream with the sugar.
  4. Add the baking powder, cocoa powder and flour. Mix until there is an even consistency, similar to breadcrumbs.
  5. Beat the egg with the milk.
  6. Add to the flour mixture and stir until combined.
  7. Place half an Oreo in the base of each cupcake case.
  8. Spoon some of the cake mixture into each case, on top of the Oreo.
  9. Bake in the oven for 15-20 minutes.
  10. Meanwhile, prepare the buttercream.
  11. Soften the butter.
  12. Add the cocoa powder and icing sugar and mix.
  13. Add the crushed Oreos.
  14. If the buttercream is too thick or stiff, add a little milk.
  15. When the cakes have cooled, put a spoon of buttercream on each, smooth slightly and place half an Oreo on top of each cake.
